Mature Cheese

Cheese made from raw or pasteurised goats’ milk with minimum maturing of 75 days.

Its weight must be between 200 and 1200 g.

Its rind is clearly defined and has mainly greenish-brown mould on the outside. The colour of the curd goes from white to ivory. It has a firm, hard texture with very few or no holes.
