Semi-hard Cheese

Cheese made from pasteurised goats’ milk, with a minimum of 30 days’ maturing.

Its weight must be between 200 and 1200 g.

Its rind is clearly defined and has greenish-brown mould on the outside. The colour of the curd goes from white to ivory. It has a hard to semi-hard texture with very few or no holes.
